Easy, Grain Free Hamburger Buns

Ingredients:

6 eggs
pinch of salt
spices to taste (optional)
a bit of crushed nuts or flax for a "grainy" taste (optional)

In two bowls separate the egg whites and the egg yolks. Whip the egg whites until they peak stiffly. Into the egg yolks beat the salt in until the yolks are well mixed. Gently fold the yolks into the whites. Add any optional ingredients and fold in. On a greased skillet, on medium, pour the batter like pancake batter into a circle. Use batter right away otherwise it will settle and separate. Cook until golden brown on the bottom, flip and cook the other side.

Yum!

Around the web today..........Facebook keeps getting into trouble regarding people's privacy, now they track you when you aren't even logged in? Sounds like a horror movie but it's true. And we all know that here at Wise and Glorious we eat a Paleo/Primal/Nourishing Traditions diet (hence the grain free hamburger buns :)) so I was a little shocked to hear of a government raising taxes on a food because it's fattening. Not all fats are created equal and some are essential for good health. This is one government over step that has me concerned we may be in for a slippery slope of regulations on what we can eat.

  1. These look fantastic and really interesting! They sort of look like crumpets (but without the flour). I think I'm going to have a bash at making these :0)

And you're absolutely right, not all fats are created equal - the current low/zero-fat approach that appears to be recommended is really rather worrying, especially when you see children fed with low-fat 'yoghurts' full of aspartame and who knows what else! :0(

  2. Ninny,

Thanks, they taste fantastic too, my kids love them! Let me know how yours turn out!

I agree with you on the yogurt. Yogurt as a "health food" is one of the biggest scams out there. They take out the good fats and add more sugar then ice cream has! But parents think they are giving their kids something healthy.

We buy plain, full fat, organic yogurt (or sometimes make our own) and we add honey or maple syrup but when the yogurt is full fat it isn't as bitter and I find we need very little sweetener :)
