This is a great recipe when you're feeling like a comfort food but don't want to pack on the extra carbs found in potatoes.
Ingredients:
- 3 cups Chopped onions
- 1 cup Sliced celery
- 2 Tbsp. Minced garlic
- 1/4 cup Olive oil
- 3 cups Chopped red bell peppers
- 2 quarts Chicken broth
- 2 quarts Cauliflower, chopped into bite size pieces
- 2 quarts Whole milk or coconut milk
- 1/2 cup Chopped fresh basil
- 2 Tbsp. Lemon juice
- 1 tsp. Black pepper
- 1/8 tsp. Cayenne pepper
- 1 cup diced carrots (optional)
- Sauté onions, celery and garlic in olive oil in a stockpot over medium heat for 5 minutes, or until softened.
- Stir in peppers.
- Add chicken broth; bring to a boil.
- Stir in cauliflower. Bring to a boil; reduce heat and simmer 2-3 minutes.
- Add milk; bring to a simmer, stir until thickened.
- Stir in remaining ingredients.
